Wonderful Seedless Lemon Salad Dressing Three Ways

Ingredients

Vegan Pesto Dressing:

  • 1 1/2-oz. package basil leaves
  • 1 garlic clove
  • 1 Wonderful Seedless Lemon, zested and juiced
  • 1 tablespoon almond butter
  • 1 teaspoon salt
  • ¼ teaspoon red pepper flakes
  • 1/3 cup olive oil

Honey Dijon Lemon Vinaigrette:

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 Wonderful Seedless Lemon, zested and juiced
  • 1 teaspoon salt

Creamy Lemon Caper Dressing:

  • 1/3 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon capers, drained
  • 1 Wonderful Seedless Lemon, zested and juiced
  • 1/4 teaspoon salt
  • Freshly ground black pepper

Preparation

  1. Vegan Pesto Dressing: To a food processor, add the basil, garlic, lemon zest, lemon juice, almond butter, salt, and red pepper flakes. Pulse to create a finely chopped yet thick consistency. With the machine running, pour in the olive oil. Add more salt and red pepper flakes to taste. Transfer to a bowl or jar. Cover and refrigerate until ready to serve.
  2. Honey Dijon Lemon Vinaigrette: In a small bowl or jar, combine olive oil, balsamic vinegar, Greek yogurt, honey, Dijon mustard, lemon zest, lemon juice, and salt. Whisk well. Cover and refrigerate until ready to serve.
  3. Creamy Lemon Caper Dressing: In a small bowl or jar, combine mayonnaise, garlic, capers, lemon zest, lemon juice, salt, and pepper. Whisk well. Cover and refrigerate until ready to serve.
