Wonderful Seedless Lemon Salad Dressing Three Ways

Ingredients
Vegan Pesto Dressing:
- 1 1/2-oz. package basil leaves
- 1 garlic clove
- 1 Wonderful Seedless Lemon, zested and juiced
- 1 tablespoon almond butter
- 1 teaspoon salt
- ¼ teaspoon red pepper flakes
- 1/3 cup olive oil
Honey Dijon Lemon Vinaigrette:
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon Greek yogurt
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 Wonderful Seedless Lemon, zested and juiced
- 1 teaspoon salt
Creamy Lemon Caper Dressing:
- 1/3 cup mayonnaise
- 1 clove garlic, minced
- 1 teaspoon capers, drained
- 1 Wonderful Seedless Lemon, zested and juiced
- 1/4 teaspoon salt
- Freshly ground black pepper
Preparation
- Vegan Pesto Dressing: To a food processor, add the basil, garlic, lemon zest, lemon juice, almond butter, salt, and red pepper flakes. Pulse to create a finely chopped yet thick consistency. With the machine running, pour in the olive oil. Add more salt and red pepper flakes to taste. Transfer to a bowl or jar. Cover and refrigerate until ready to serve.
- Honey Dijon Lemon Vinaigrette: In a small bowl or jar, combine olive oil, balsamic vinegar, Greek yogurt, honey, Dijon mustard, lemon zest, lemon juice, and salt. Whisk well. Cover and refrigerate until ready to serve.
- Creamy Lemon Caper Dressing: In a small bowl or jar, combine mayonnaise, garlic, capers, lemon zest, lemon juice, salt, and pepper. Whisk well. Cover and refrigerate until ready to serve.
