Ingredients
Haddock:
- 2 haddock fillets, 1/2 lb. each
- Salt and ground black pepper to taste
- 3 tablespoons olive oil
- 1 Wonderful Seedless Lemon, cut into 1/4" slices
- Cooked asparagus, for serving
Lemon-Caper Sauce:
- 1/4 cup (1/2 stick) butter, melted
- Juice from 1/2 Wonderful Seedless Lemon
- 1 tablespoon capers
Preparation
- Preheat the oven to 400°F. Line a baking sheet with parchment paper or aluminum foil; set aside.
- Season the haddock with salt and ground black pepper. Drizzle with olive oil. Bake for 20 minutes until lightly golden brown.
- For the lemon-caper sauce: Meanwhile, in a small bowl, combine the melted butter, lemon juice, and capers; mix well.
- Drizzle the lemon-caper sauce over the warm haddock. Garnish with sliced lemons and serve with asparagus.
