Ingredients
- 2 cups POM Wonderful Pomegranate Arils, plus 1 tablespoon for garnish
- 2 cups heavy cream
- 3 tablespoons confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 cup lemon curd
- 1 (8 oz.) package cream cheese, softened
- 2 cups lemon pound cake or plain pound cake, cut into 2" cubes
- 1 Wonderful Seedless Lemon, cut into ½" slices for garnish
- Fresh mint sprigs for garnish
Preparation
- In a standing mixer fitted with a whisk attachment, beat the heavy cream, sugar, and vanilla together on a high speed until stiff peaks form, or about 2–3 minutes. Cover and refrigerate until it’s ready to use.
- In a large bowl with a standing mixer fitted with a paddle attachment, combine the lemon curd and cream cheese until it’s smooth; set aside.
- To assemble the trifle: In a 4-quart trifle dish or glass bowl, place a layer of 1-cup pound cake cubes, followed by 1 cup of POM Wonderful Pomegranate Arils, followed by 1 cup of whipped cream. Repeat with one more layer of each.
- Cover and refrigerate for 3 hours (or overnight) before serving. Garnish with a circle of half lemon slices on the top center of the trifle. Sprinkle it with the remaining 1 tablespoon of POM Wonderful Pomegranate Arils and the mint sprig.
