Lemon Yogurt Poppy Seed Pound Cake

Overview

This lemon poppy seed pound cake bakes in a single loaf pan in under an hour. It stays moist for days thanks to a whole-milk yogurt batter and a lemon soaking glaze applied hot from the oven. Zest and juice from Wonderful Seedless Lemons go straight into the crumb and glaze, with no seeds to slow you down.

Ingredients

  • 1 tablespoon Wonderful Seedless Lemon zest
  • ¼ cup Wonderful Seedless Lemon juice
  • 1 cup plain 2% Greek yogurt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup avocado oil
  • 1 cup granulated sugar
  • 1-½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons poppyseeds

Glaze:

  • ¾ cup confectioners’ sugar
  • 5 teaspoons Wonderful Seedless Lemon juice
  • Wonderful Seedless Lemon slices, for garnish

Instructions

  1. Heat oven to 350ºF. Spray a 9"x5" loaf pan with cooking spray and line with parchment, leaving parchment to hang over two sides. Spray parchment and set aside.
  2. In a large bowl, whisk together the lemon zest, lemon juice, yogurt, eggs, vanilla, oil, and sugar until the mixture is smooth.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and poppy seeds. Stir dry mixture into wet ingredients and mix until combined.
  4. Transfer the mixture to the loaf pan and bake until the center springs back when touched and the loaf is a deep golden brown around the edges, about 50–55 minutes.
  5. Let cake cool in pan for 15 minutes, then use the parchment edges to lift it out of the pan to a wire rack. Cool completely.
  6. For the glaze, whisk together the confectioners’ sugar and lemon juice. Spoon over loaf and garnish with thinly sliced Wonderful Seedless Lemons.

Optional Tips

  • Room-temperature butter and eggs are not optional. Cold butter does not cream properly, which means you lose the primary structure of the cake. Cold eggs can cause the batter to break and look curdled. Pull both from the refrigerator at least 45 minutes before you start.
  • Cream the butter and sugar fully. Three to four minutes on medium speed. The mixture should be noticeably pale and fluffy before you add the eggs. This is the most important step in the process.
  • Alternate the dry and wet ingredients. The flour-yogurt-flour-yogurt-flour sequence prevents gluten from overdeveloping, which is what makes pound cake tough rather than tender. Mix on low and stop as soon as each addition is incorporated.
  • The soaking glaze is the secret. It adds moisture and lemon flavor directly into the crumb after baking. This is the step that separates a moist pound cake from a dry one. Do not skip it, and do not wait for the cake to cool before applying it.
  • Poke the holes immediately. The warm cake absorbs the glaze most efficiently. If the cake cools first, the glaze sits on the surface rather than soaking in.
  • Start checking at 50 minutes. Ovens vary, and overbaking is the leading cause of dry pound cake. A toothpick that comes out with moist crumbs (not wet batter) means the cake is done.
  • The cake gets better on Day Two. The soaking glaze continues to redistribute moisture overnight. If you can, bake it the day before and serve it the next day.

Variations

  • Lemon Blueberry Pound Cake. Fold ¾ cup fresh blueberries, tossed first in one tablespoon of flour, into the finished batter. The flour coating keeps them suspended rather than sinking to the bottom during baking.
  • Lemon Almond Pound Cake. Replace ¼ cup of the all-purpose flour with almond flour and add ½ teaspoon almond extract along with the vanilla. The result is a slightly more tender, denser crumb with a warm, nutty undertone.
  • Lemon Pound Cake Without Poppy Seeds. Simply omit the poppy seeds. All other proportions remain the same. The cake is equally moist and lemon-forward without the texture contrast.
  • Lemon Cream Cheese Pound Cake. Replace the yogurt with an equal weight of softened cream cheese. The result is richer and notably denser, with a tighter crumb.
  • Mini Lemon Pound Cakes. Divide the batter among a 12-cup muffin tin lined with paper cups. Bake at 325°F for 22–25 minutes. Poke and glaze each one individually as they come out of the oven.
