Fresh Mussels with Lemon-Herb Sauce

Ingredients
- 1 lb. black mussels
- Juice from 1 Wonderful Seedless Lemon
- ½ tablespoon Wonderful Seedless Lemon zest
- 1 tablespoon extra-virgin olive oil
- 1 shallot, minced
- 2 garlic cloves, minced
- ¼ teaspoon red pepper flakes
- ½ cup dry white wine
- ¼ cup heavy cream
- 3 tablespoons unsalted butter
- Salt and ground black pepper to taste
- ¼ cup fresh chopped parsley, plus more for serving
- Wonderful Seedless Lemon wedges, for serving
- Warm crusty bread, for serving
Preparation
- Wash and clean the mussels; set aside.
- In a large saucepan over medium-high heat, combine the olive oil, shallot, garlic, and red pepper flakes. Sauté until translucent.
- Add the wine and reduce for a few minutes, and then add the cream, butter, salt, and pepper.
- When the butter has melted, add the mussels and toss well. Cover and cook the mussels for about 5 minutes, or until they open.
- Turn off the heat and add the chopped parsley, lemon juice, and zest. Serve immediately with the lemon wedges, more chopped parsley, and crusty bread.
