Fresh Mussels with Lemon-Herb Sauce

Ingredients

  • 1 lb. black mussels
  • Juice from 1 Wonderful Seedless Lemon
  • ½ tablespoon Wonderful Seedless Lemon zest
  • 1 tablespoon extra-virgin olive oil
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • ¼ teaspoon red pepper flakes
  • ½ cup dry white wine
  • ¼ cup heavy cream
  • 3 tablespoons unsalted butter
  • Salt and ground black pepper to taste
  • ¼ cup fresh chopped parsley, plus more for serving
  • Wonderful Seedless Lemon wedges, for serving
  • Warm crusty bread, for serving

Preparation

  1. Wash and clean the mussels; set aside.
  2. In a large saucepan over medium-high heat, combine the olive oil, shallot, garlic, and red pepper flakes. Sauté until translucent.
  3. Add the wine and reduce for a few minutes, and then add the cream, butter, salt, and pepper.
  4. When the butter has melted, add the mussels and toss well. Cover and cook the mussels for about 5 minutes, or until they open.
  5. Turn off the heat and add the chopped parsley, lemon juice, and zest. Serve immediately with the lemon wedges, more chopped parsley, and crusty bread.
