Spanish Lemon-Garlic Shrimp

Ingredients

  • 1 lb. medium shrimp, peeled and deveined
  • 1/2 cup extra-virgin olive oil
  • 1/2 tablespoon Wonderful Seedless Lemon zest
  • 1 tablespoon Wonderful Seedless Lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1 tablespoon chopped fresh Italian parsley, for garnish
  • Red pepper flakes, for garnish
  • Toasted sliced baguette, for serving (optional)

Preparation

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine the shrimp, olive oil, lemon zest, lemon juice, garlic, salt, and paprika; mix well to coat the shrimp.
  3. Add the shrimp to a 6" cast iron skillet and bake for about 20 minutes, mixing halfway through, until shrimp are golden brown and oil is bubbly.
  4. Garnish with fresh chopped parsley and red pepper flakes. Serve with toasted sliced baguette if desired.
